given the low power consumption CPU you have, you could also use a 1000W ATX v3.1 PSU. Look for the NZXT C1000 and/or the Corsair RM1000x (ATX v3.1)
I would go for the Corsair Rm1000x (2024)

Normally, it is 105 °C, the connector. The cable's insulation can vary. The pins are the ones that get hot and create problems.
